Good morning friends! Brrrrrrr, it’s a chilly morning here in North Carolina, about 25 degrees. I was so excited to make breakfast this morning to warm myself up. I was even MORE excited because it had pumpkin spice in it–yes, this girl is very basic.
I am a basic white girl
If you’ve read my previous posts you would know that I am a huge fan of pumpkin and I drive my husband absolutely BONKERS from the end of August to about February. You only get it a few months out of the year so you have to get as much as you can, right?
So without further ado, here is my absolute favorite egg white oatmeal recipe!
Pumpkin Spice Protein Oats
- 1/2 Cup Soy milk
- 3/4 Cup Liquid egg whites
- 2 TBSP Pumpkin puree
- 2 TSP Pumpkin spice
- 1 TSP Cinnamon
- 1/4 TSP Ginger
- 1/2 Cup Quick Oats
- 50-60 g Mashed banana
- Mash banana with the liquid egg whites, pumpkin puree, and milk
- Mix in dry ingredients: pumpkin spice, cinnamon, ginger, and quick oats.
- Microwave for 1 minute.
- Stir, and continue to microwave for 30 sec increments for about 1.5 – 2 minutes total.
Even my almost two-year-old son Jaxson loves it! He couldn’t get enough of it, he even tried to grab the spoon from me! I am glad that he’s developed quite the appetite as he got older. If you’ve been following our story for some time you would know that he was Failure to Thrive at one point, he truly scared us. But now, look at him!
This recipe is so versatile, I’m thinking of adding some fresh cranberries and almond butter as toppings next time! Let me know below if you’ve tried it!
