I was recently gifted an Instant Pot (6 QT) from a good family friend this past Christmas, and honestly I’m surprised I didn’t buy one sooner. If you’ve lived under a rock the last few years and not familiar with the Instant Pot, it is a pressure cooker, rice cooker, and so much more. It’s gold is what it is!
They come in variety of sizes: 4 quart, 6 quart, and 8 quart!
You can do anything from boiling eggs, making desserts, and even yogurt. It’s truly amazing! I wish I jumped on the Instant Pot wagon much sooner. It would’ve alleviated all of my stress of figuring out what to cook fast.

Between working on my business and blog I am shuffling my little one to his occupational, speech, and physical therapy appointments.
That doesn’t even include his specialty care that is over 2 hours away in the Raleigh / Durham area. When I commute to those I’m usually gone for a good 5 to 6 hours – depending on traffic. So to have something that is quick and delicious is a must especially on those crazy days.
As you can see, my schedule stays full on a daily basis! That’s why it’s imperative for me to time block everything and have recipes that are truly quick and easy to make… like Instant Recipes!
You can cook amazingly delicious recipes in a matter of 20 minutes – tops! My friend even cooked a FROZEN chicken in the Instant Pot and it was done in 20 minutes.

I’ve made quit a few recipes since receiving my Instant Pot as a gift! From chicken Parmesan, baked ziti, and chicken and sausage jambalaya. None of them disappoint!
Our current favorite Instant Pot recipe would have to be the Garlic Parmesan Chicken Pasta recipe, definitely not healthy but very delicious and simple to make. You don’t even have to cook the noodles prior to adding it to the pressure cooker – it cooks with everything while it pressure cooks!
If you’re big into meal planning and eating healthy it’s perfect for that as well. I knocked out a chicken and potatoes recipe and honey teriyaki chicken recipe in less than 2 hours. That fed my husband and I for lunch throughout the week.

My Final Thoughts
I’m truly thankful for our Instant Pot. It has saved me a lot of time when it comes to cooking dinner on busy, busy evenings. I love how you can start and forget it while you get things ready for the next day.
